Summer light BBQ
In the summer I like to create a vacation lifestyle that resembles Jimmy Buffet... I am living in Margarita-ville. I love ocean swims, jumping and body surfing the waves, and walking the shore. The blue sky, green-blue Atlantic and white sand are populated by beach bums and sea gulls. I take long walks, and get suntanned.
For a lovely summer dinner grab a few friends and:
Drink: Sangria made with cubed fresh peaches and a bottle of red wine, kicked up with 2 shots of brandy and 2 shots of triple sec. Splash seltzer on each glass when serving.
Grill:
I like watching cooking shows and getting ideas. The Chew showed how to grill romain lettuce; it is so easy. Only cut each head in half sprinkle a bit of oil and put on the grill with the root part intact so it doesn't fall apart on the grill. Then when you take it off the grill slice it and cover it with a dressing of:
1/4 cup olive oil
2 tbs. dijon mustard
orange juice from 2 oranges that are halved and roasted on the grill - 1/2 cup ( use regular orange juice if you don't have oranges)
2 tbs. honey
salt and rough cracked pepper
Grill: Salmon fillets, patted dry and rubbed with salt, pepper, brown sugar, paprika. Place fillets on oiled grill with skin side down if you like crispy skin and cook a bit more than halfway (6 minutes)
Boil some red potatoes and smash them with butter, salt, pepper, and fresh basil from your container garden. ( or from the store)
Keep a side salad in the fridge: I use roasted or plain corn ( comes frozen) mix with 2 cans of black beans add 1 teaspoon cumin and 1 teaspoon cayenne
Dessert: Ralphs (Italian style) ices : I mix chocolate with coconut/ serve water Mellon because no summer meal is complete without it.
