Festival Meals ( Rosh Hashanah)

All festivals meals involve family, friends and food; the perfect combination for fun. I have been hosting Rosh Hashanah for as long as I remember. I am not ashamed to tell you that half the years I have gone to the local deli/restaurant and ordered the meal entirely. I don't think I paid much more than when I cook but there are less leftover and no bragging rights to have done it yourself. So what follows is how I do it when I cook for 15-18 people
Drinks: Pomegranate Martinis,
1 oz Tripple Sec, 1 oz Pomegranate Juice, 2 oz Pomegranate Vodka- Makes 2 : 2 Martinis

Appetizers: Stuffed grape leaves, Babba ganush, Humous ; Tahini; mixed capers and roasted peppers, Calamata Olives - spread out pita chips or crackers for dipping, Pickled mushrooms; .... sweet Manischewitz; Gefilta Fish. and horse radish.

Soup: Chicken soup with Matzo balls
Soup:Add a giant roaster chicken to 2 gallons of water. Add bunch of parley, dill and 3 onions whole. Also add a 2cups of baby carrots and a bunch of celery with the tops. After the first boil for 3 mins simmer for 2 hours. Then strain broth and retain veggies and chicken for another time.
Balls: 2 cups matzo meal, 1 teaspoons baking powder, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon dried parsley,  add dry ingredients to 8 beaten eggs, 1/2 cup oil, 1/2 cup water. put in freezer for 10 minutes then shape into balls using 2 table spoons and hands dipped in oil to smooth out the balls. Drop carefully into 2 quarts of simmering chicken broth (store bought) or water. (don't waste your amazing broth to cook the balls) You will get 20-24 balls.

Brisket: Get a kosher butcher cut slab of 5-6 lbs of meat. Cover sides with salt and pepper. put in the oven in a large lazagna disposable pan at 425 for 45 minutes. Then turn and place the topside down on a bed of 3 sliced onions and 5 cloves of garlic. Cook for another 30 minutes and then lower to 225 degrees for about 6-8 more hours. Let cool for 1 hour then slice and simmer gravy to thicken by whisking in a few table spoons of flour. We like the gravy pureed with an impression blender.





Noodle Kugal:
3 10z bags of egg noodles I use #Kemach Heimeshe Egg Noodles
15 eggs
1 tsp salt, 1/2  tsp pepper
paprika to taste and for the top
Cook and and drain the packages of noodles for 5-8 minuets
Add -1and 1/2 cups oil to the drained noodles (let noodles cool before) blending with the 15 eggs beaten and seasoned with the salt and pepper
Pour the batter into greased  disposable lasagna tray (you probably don't have anything big enough )
Bake in a 350 oven for 1 hour
You can top with paprika and or caramelized onions 

Hallahs are round to show the circular nature of our lives and year. Dessert is sweet honey cake to show our desire for a sweet year ahead. New, crisp fall apples also dipped in honey for a sweet year.
