White Bean Soup; make for any meal -occasion-10/23 Friends loving fall brunch
I have a friend Robin, we met at 12 years old in Middle school. We would walk to her house instead of taking the bus to mine. I remember her teaching me the words to a popular show tune that I had never heard. She was cute, small and popular, she was effetely nice and genuinely interested in others. And, we all loved popular fashion. Since meeting her I never had to make any friends. She is a friend magnet and only top quality people. So today I hosted Robin, her partner Bob, Eddie and Barbara. ( college friends) It was a bright, cool and crisp fall day in Shirley, New York.
White Bean Soup
I bought a bag of heirloom beans and they weren't exactly white, more cream. Melt in you mouth creamy. Always looking for ways to cook them I came upon this easy way of combing my turkey carcass. I make the carcass into a delicious broth with onions and celery with a few bay leaves , salt and pepper then adding the cooked beans to the strained broth and some sautéed carrots, shallots and more celery and finish with spinach and parsley.
1 tablespoon olive oil
1 large onion chopped for soup
2 garlic cloves
2-3 carrots chopped
2-3 celery stalks chopped
6 cups of broth
1 teaspoon dried thyme
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper
3 15 once cans of white beans drained ( or about 3 cups dried soaked over night)
2 cups baby spinach
Fresh parsley chopped ( for serving)
Grated pHoarmesan cheese ( for serving)
