Balsamic Chicken Cutlets; Easy dinner for before a show

  I love going to a concert and having dear friends. I needed a meal to make for before the show that would be a crowd pleaser.

Balsamic Chicken balsamic glaze

1/4 cup EV olive oil

3 tablespoons balsamic glaze (store bought) or make with 1 cup balsamic vinegar and 1 tablespoon brown sugar.

1 tablespoon honey

1 lemon, juice of

4-5 large garlic cloves, minced

1 tablespoon fresh thyme (or teaspoon dried)

1 teaspoon dried oregano

1/2 teaspoon sweet paprika

8  boneless and skinless chicken ( can use breast or thigh)

salt and pepper to taste

1. Mix together olive oil, balsamic glaze, tomato base, honey and lemon juice, add the garlic cloves, thyme oregano , sweet paprika.

 2. Pat the chickens dry (this apparently is an important step) sal and pepper both sides and add the chicken to the mixing bow and toss to coat. Refrigerate for 2 hours or set aside while oven heats.

3. Heat the oven to 425 and adjust rack in the middle, bake the chicken in a baking dish; white meat bake for about 20 minutes, dark for 30. Cover with aluminum for the first half then uncover.  Sprinkle with fresh parsley.
