Comfort Food: Chicken Pot Pie & Apple Crisp


 Winter time is always a hard time for diets, but this year without any reservation, I am supporting the creation of comfort food of all kinds. For our weekly card game, with our friends who are just like us, I made a menu of 2 foods that are known to satisfy.  

Chicken Pot Pie with a biscuit topping; says be warm and eat food that is hot and mushy. Apple crisp, is like eating an apple that is soft, warm, and sweet. Top it with vanilla ice-cream for a comforting hug.


Chicken Pot Pie with Biscuit topping:
Filling: 

1 Medium onion chopped (optional)
1/2 stick of butter 4 tbs.
1/4 cup flour
2 cups of chicken broth
1 cup of milk 
1/2 tsp dried thyme
1/2 tsp rosemary
salt and pepper to taste
12 oz frozen mixed vegetables
2 chicken breasts from a rotisserie chicken (cubed)



1. Preheat oven to 400*
2. Melt butter in a cast iron skillet over medium heat. (If you want add chopped onions and staute 8-10 minutes). 
3. Add flour and sauté till slightly brown, about 1 or 2 minutes.
4. Add liquids and seasoning: chicken broth, milk, thyme, rosemary, salt, and pepper. Simmer until it's slightly thickened.
6. Mix in vegetables and chicken, stir and remove from the heat.


Biscuits:

2 cups of flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 stick of frozen butter3/4 cup milk


1. Mix dry ingredients in a large mixing bowl & make a well in center of mixture.
2. Grate frozen stick of butter in center of the mixture with a box grater, with your hands in a circular motion mix the butter and flour. Add milk in drops until the dough is able to be formed.
3. Fold biscuit dough over and form into a flat form. 
4. Use a knife or pizza cutter to cut out squares and drop onto pot pie filling in skillet.
5. Cook for 30-40minutes








Apple Crisp: With Oat Streusel Topping







Streusel

3/4 cup flour

3/4 cup old-rationed oats

1/2 cup packed brown sugar

1 teaspoon ground cinnamon

1/2 cup cold butter, cut in pieces 

Filling:

6 cups chopped peeled apples (6 medium)

1/2 cup sugar

2 tablespoon flour

1 teaspoon ground cinnamon

1 teaspoon lemon juice

Steps:

1. Heat oven to 375 spray glass baking dish with cooking spray

2. Mix flour, oats brown sugar and cinnamon until blended. Add cold butter cut into cubes.

3. Mix Filling ingredients until well coated. Spread evenly in baking dish. Sprinkle streusel over top.

4. Bake 30-35 minutes until topping is golden brown and juices are bubbling.

5. Cool at least 29 minutes until serving with ice cream.
