Asian Style Beef Rice Bowl



This is my favorite dinner; a bowl of rice covered with ginger & garlic flavored beef finished with soy sauce. The veggies are sautéed briefly and added on top.
Ingredients:


For 4 servings:

2-Zucchini, 4-scallions, 2 thumbs -ginger, sliced 6 oz-mushrooms,4-carrots, 4 cloves-garlic
2-3-tbs-sesame oil, 4-tsp-siracha, 4 Tbs-soy sauce, 1-tsp-white wine vinegar,
20oz-ground Beef, 2cups-Jasmine rice

1.Thinly slice the zucchini, mushrooms,carrots,  and scallions. Mince ginger and garlic.
2. Cook rice
3. Pickle scallion whites and make sauce by combining scallion whites with vinegar and salt. In another bowl combine sesame oil half soy sauce and tbsp sugar and sriracha.
4. Stir fry veggies by first cooking carrots and zucchini  transfer to a bowl and then cook mushrooms. Transfer to a bowl.
5. Stir fry the beef in a small amount of sesame oil with garlic and ginger. Drain excess fat and cook high until beef is browned and crisp. Finish with the rest of the soy sauce.
6. Fluff rice and divide between bowls. Arrange beef, zucchini, carrots, and mushrooms on top. Top with pickled scallion whites and scallion greens then add sriracha to taste.
