Grandmas Side Dishes: Kugel-and Casserole

Who will read this post? My family... so if your reading, your family.  Nanny Joanie made a kugel with the recipe using seasoning from a box (Lipton's Onion Soup)... Grandma Vivian made kugels using recipes from her Temple Sisterhood ; Temple Emmanel Lynbrook.  My recipe uses only a few ingredients and I made it up myself.

I found Vivian's recipe box and recreated her baked rice and potatoes, apple&raison noodle  kugel, sweet dairy noodle kugel,

My mom made a kugel since I was a kid with Lipton Onion Soup. Nanny's directions are from the onion soup box: 1 package of egg noodles, 6 eggs mixed with a package of onion soup, 1/4 cup of vegetable oil, grease the pan then add the rest to the mix.

I like to only use clean ingredients, my onion noodle kugel uses cartelized onions (3) and a package of egg noodle mixed with 6 eggs... salt & pepper.

I learned how to cut onions when I was on a Kibbutz in Israel. I was 16 years old it was August of 1973. I always say that the next October is real completely changed because of the Yom Kippur war but for that brief moment time everybody loved Israel Europeans from all over the world were coming to Israel to volunteer and sleep sleep on the beautiful beaches and play music in the desert. I was on a boy on the kibbutz also Tell me a joke 16, whose mother worked in the kitchen, had a crush on me so he asked his mother to get me transferred from picking peaches to cutting onions for the Israeli salad of Next onions, tomatoes, cucumbers, every day. She didn’t know English and I didn’t know Hebrew, so we never talked. Haguy would come and visit occasionally and I used to visit with him in the evenings he could talk English a little bit I don’t remember what we talked about but I learned how to cut onions.



I made a broccoli kugel with three heads of broccoli, par boil it in the 1 package of noodle water. Mix together with 4 eggs and 3 scallions sliced thin.

Roasted carrots add a low carb side with lots of nutrients. Combined with good jam like strawberry & basil from a local seller its sweet and savory. I used a slicer to slice almost 5 lbs.


Roast 425*

Mix with a good jar

( I transcribed Grandma's recipe as close as I could even if I was a bit confused)

Grandam Vivian's Dairy Sweet Noodle Pudding:
cook 350 1 hour
instructions:
Put all together in ref for a few hours: ( I didn't do this) Grandma added: watch- it doesn't get too soupy-( not sure what you should do if it gets too soupy, maybe stir?)
1 package noodles
1/4 cup margerine
3eggs
8oz cream cheese
3/4 pt sour cream
3/4 cup sugar
1/4 cup corn flakes crumbs ( I just pressed down on flakes with a bowl and potato masher)

Boil noodles, melt margarine& hold in reserve - 2 tbs margarine
2 tbs sugar & crumbs

Mix ingredients together & pour over boiled noodles
mix the marg. & sugar &crumbs held in reserve- together sprinkle oner top



Grandma Vivian's Rice and Potato Casserole:

Grease pyrex dish- with margarine
Add 1/2 cup rice -peal potatoes and slice thin. ( I used a food processor )
Line edges of casserole- left over put on top ( approximately 2 sm. potatoes )
1 onion diced
salt, pepper, margarine on top. Fill with water... oven approximately 2 hr. 325.


Grandma's apple & raison noodle kugel:
Boil noodles as directed
Beat 2 eggs (1 added an extra)
3 tbs sugar
pinch salt
1/2 cup milk ( I substituted almond mild to keep it parve)
2 apples peeled, cored, and sliced (I used the food processor )
1/4 cup raisons ( ( used 1/2)
margarine for greasing pan and to put on top
bake till brown  about1 -1/2 hours
