Hearty, Serious Dinner, Slow Cooker Chicken Cacciatore
It is my sister in -laws unveiling of the headstone and a bunch of cousins are meeting to have a religious service officiated by a Rabbi. This is a Jewish custom and officially ends the one year mourning period. Occasions like this need a meal that is savory, satisfying and serious. This dish would work well after a wake, shiva, or funeral.

2 lb. Skin-on bone in chicken quartered
kosher salt (1 teaspoon) or to taste
1/2 teaspoon cracked pepper
5 cloves garlic, sliced
1 (28-oz) can crushed tomatoes -a bit less than 4 cups
1/2 cup chicken broth or 1 tsp. of Better Than Bouillon
1 tsp. dried oregano
1/4 tsp. red pepper flakes
1/4 cup of capers or quartered green olives
Season the chicken and brown both sides. ( I have the nifty cuisinart that browns and slow cooks in the same device)
Add the diced onion, garlic, and vinegar, cooking a few minutes. It'll smell good.
Add the onions and seasoning, (oregano, red pepper flakes, salt and pepper. Cover and cook on low for 6-8 hours.
