Top Dishes: Chili, Pho soup, Sesame Noodles, Blackened Fish

It's been a year of Hello Fresh and I am now happy to say a goal has been met. Although my mother never really cooked, nor did her mother I am now following in my great grandma's footsteps and I know how to cook. I am really just learning still; even after a year of a food delivery service with indgredients, recipes and instructions. Today was a cloudy summer day so I tried out some go-to recipes for the new school year...( three weeks away and already I'm anxious)
1.  Turkey Chili
(Good for freezing and using for breakfast, lunch , & dinner (cheese quesedia, rice)
Ingredients: pinto beans, scallions, ground turkey, cumin, crushed tomatoes, garlic, poblano pepper, chili powder,
Chop the garlic, scallions and pepper. Saute the turkey with salt and pepper, then remove from pan and add the vegetables add the chili powder and cook to coat. Stir in the beans, crushed tomatoes, and beef. Let simmer for 30 mins.
2.  Beef Pho and Kale Soup
Good with ramen noodles for sluping.
Ingredients: Ground beef, Garlic, ginger, Thai chili, onion, beef stock, kale, soy sauce, ramon noodles
spices: cardmon, cloves, star anise, cinnamon stick
Bring the beef stock to simmer with the spices. Brown the ground beef with the onion, garlic, ginger and chili. Add beef and chopped kale to the stock after removing the spices. Cook the ramen noodles.
3. Sesame Peanut butter Noodles
This is served cold as a salad
Ingrediants: Scallions, Peanut Butter, Seasame Oil, Red Cabbage, Garlic, Linguine Pasta, Rice vinegar, soy sauce, honey, seasame seeds.
Cook the linguine. Chop the garlic, slice the scallions, pepper and red cabbage thinly.  Whisk together peanut butter, garlic, vinegar, sesame oil, soy sauce, pepper, and honey. Toss the noodles with the red cabbage, scallions, and sauce.
4. Blackened Tuna
You can use any kind of fish and any side dish. I used Tuna with roasted rotatoes and blitered string beans, onions and peppers.
Ingredients: Fish, Red Bell Pepper, Green Beans, Yellow Onion, Yukon Potatoes, lemon, cilantro, blackening seasoning, garlic:
Spices for blackening seasoning: garlic powder, cayenne, paprika, salt, black pepper, cumin, dried thyme.
Roast the diced potatoes. Slice and blister the veggies with oil, and add the chopped cilantro at the end. Cook the fish in oil after seasoning all sides with the seasoning.
