Easy summer Meals
My idea of easy is easier than most. I was raised on Meat broiled on an aluminum "broil foil" pan. On the side was canned or frozen veggies. Even in the 70's I ate paleo ....low carb ala Dr. Atkins. Today I eat many carbs but in the summertime even I am looking for a meal is low in carbs. I came up with this menu and the scale was happy. Or, I was happy when I got on the scale, and my taste buds were satisfied.

Spagetti Squash- bake whole for 1hour at 350... let cool a bit. Cut in half , scoop out seeds and discard. Scoop out noodle like center and put in a bowl. Shave garlic over and add olive oil and tomato sauce.
While cooking the squash have cooking a chicken loaf cooking. 2 lbs. of chopped chicken or any low-fat meat you prefer with 1 cup of panko crumb, 1 egg and 1 cup of cheddar. Add salt and pepper to taste and chop 2 tablespoons of rosemary, one for inside and the other for on top. Surround the loaf with cherry tomatoes and bake for an hour.
Serve together and you even have some calories left for a dessert. Try a fruit crumble with fozen yogurt.
