Labor Day BBQ
I became a teacher by going back to Adelphi University at 32, right after giving birth to my second daughter Jillian. I couldn't stand answering phones for Northwest Airlines, and decided that teaching was a good job to raise a family with. I was considering Information Systems but thought I would have to spend too much time away from the kids. Amanda my first daughter had terrible separation anxiety so I wanted a career that would give me time to mother my kids.
Teaching has made Labor Day especially important because it signals the end of summer vacation. I love my summer vacations and spend them with my family as much as possible, therefor what I'm eating & drinking for my Labor Day BBQ is very important for taking away the sting of going back to teaching.
I start early marinating chicken in BBQ sauce &1/4 cup balsamic vinegar.
Potatoes need to be boiled with skins on then chilled in an ice water bath so the skins peel off easily. Then they are cubed and blended with a mixture of mayo, cider vinegar, parsley &; celery.
Tabbouleh salad can b made from a box mix with fresh mint & cherry tomatoes.
Kosher hot dogs & rolls must be the appetizer & corn on the cob basted with butter is required.
The lemonade & ice tea can be combined with vodka or tequila. Or they can be the chaser. Use plastic cups they are now able to be recycled and people at BBQs forget where they put their cups.
Dessert must have seedless watermelon. Cut off the top & bottom then cut around top and bottom till all the rind is removed. Then cut into hand holding triangles. The best dessert for going back to work is a woopie pies. Two devils food cakes stuffed with delicious cream. Yummy helps when you have to go back to work.
